Book Review - Super Easy and Delicious Air Fryer Recipes by Emily Paster

Super Easy and Delicious Air Fryer Recipes: Nutritious and Delicious Ways to Cook Your Favorite Food with Your Air Fryer (New Shoe Press)

Super Easy and Delicious Air Fryer Recipes: Nutritious and Delicious Ways to Cook Your Favorite Food with Your Air Fryer by Emily Paster
My rating: 4 of 5 stars

Synopsis:  Turn your air fryer into the most versatile and oft-used appliance in your kitchen arsenal All the recipes in Super   Easy and Delicious  Air Fryer Recipes  use easy-to-find ingredients and feature short prep times and fast cook times.

My Thoughts: I rarely used my air fryer because things I cooked in it usually came out soggy or just not tasted like I wanted but when I came across this recipe book I decided to give it another go and not only are there some nice easy recipes in here to try but also loads of tips for beginners and the like to air frying. I couldn't believe I could cook biscuits in an air fryer and was pleasantly surprised at not only how simple it was but how great they tasted! Another thing my family and I enjoyed trying out was the apple fritters! Yummmm!

Book Review - Quick and Easy Mediterranean Recipes by Amy Riolo

Quick and Easy Mediterranean Recipes: Delicious Recipes from the World's Healthiest Diet (New Shoe Press)

Quick and Easy Mediterranean Recipes: Delicious Recipes from the World's Healthiest Diet by Amy Riolo
My rating: 3 of 5 stars

Synopsis:  Live longer, feel younger, lose weight, and have more energy by incorporating the Mediterranean way into your home kitchen.

Take the advice of the professionals who rate the Mediterranean diet the #1 healthiest diet in the world year after year. By following a Mediterranean diet rich in olive oil, nuts, beans, fish, and led by fruits and vegetables—even drinking a little wine with meals—you can improve your brain function, lose weight, improve your heart health, reduce your cholesterol, prevent diseases, look and feel younger, and prolong your life.

My Thoughts: The intro and pyramid were cool. It was interesting seeing how the Mediterranean diet pyramid stacked up to others as well as fun reading the little tidbits included with each recipe about traditions.

I have always been interested in learning some Mediterranean dishes and I did find one or two here that I am certain my family might enjoy but I wish the book had more photo's of the completed recipe's. I like to see the finished product to help me to gauge how a dish should turn out.

While most of the food sounded tasty and what little I saw looked yummy I just don't think my family would benefit much from these as they also sound like the ingredients would be to pricey to obtain on a daily or even weekly basis. Especially the cost of things now a days.

Thanks to NetGalley for providing a copy of this for my honest opinion.

Book Review - Small Batch Keto Baking Cookbook by Lolita Carrico

Small-Batch Keto Baking Cookbook: Perfect Portions of Low-Carb Breads, Cookies, Cakes, and More

Small-Batch Keto Baking Cookbook: Perfect Portions of Low-Carb Breads, Cookies, Cakes, and More by Lolita Carrico
My rating: 5 of 5 stars

Synopsis:  Fill your home with the irresistible aroma of freshly baked cookies, all while remaining on a keto diet. Dive into the world of low-carb, small-batch baking with this keto baking cookbook of flavorful and perfectly portioned recipes.

**60 delicious recipes—From flaky, buttery hand pies to rich, melt-in-your-mouth brownies, enjoy a wide variety of baked recipes you won’t believe are keto-friendly.
**Master small-batch baking—Keep your keto baking skills on the rise with tips on the best flours, small-batch baking secrets, ways to troubleshoot common issues, and more.
**Measure twice, bake once—Stay on track with easy-to-follow guidelines and recipes that stick to accurate keto macros.

My Thoughts: For health reasons I needed to begin following a low carb lifestyle and for anybody else who has been down this journey like me realizes everything you have to give up especially things like cookies, cakes, and breads so it was a wonderful delight to find this book on how to be able to have my cake and eat it to!

There are some yummy goodies like the Lemon Sour Cream Muffins with Lemon Glaze and the Simple to make Dinner Rolls in here and a lot of them are any only around 4 net carbs or less. I like the fact that this is small batch baking so I wont be tempted to pig out or have to put them up for later because most baked goods like these are better fresh than reheated I have found.

I also liked the fact that all your dietary lists come with each recipe letting you know how many calories, carbs, and so forth so you don't have to figure it out on your own. That means a lot to me!

My biggest regret is that it didn't have very many photo's. I would have loved to have seen the end product on a lot of the recipes!

Soft Sweet Molasses Cookies!

Preheat oven to 375 degrees.

Ingredients:

•1 1/2 cups butter, softened

•1 cup granulated sugar

•1 cup brown sugar

•1/2 cup molasses

•2 eggs

•4 cups all-purpose flour

•4 tsp. baking soda

•2 tsp. ground cinnamon

•1 tsp. ground cloves

•1 tsp. ground ginger

•1 1/2 tsp. Sea salt

Direction:

1. The most important thing to remember is to be sure to mix the wet Ingredients separately. Best practice to do is to mix the wet Ingredients together in a separate bowl and then the dry Ingredients together in a separate bowl. Combining them together later.

2. Preheat oven to 375 degrees.

3. Whisk together flour, soda, cinnamon, cloves, ginger and salt. Set aside. (These are your dry Ingredients.)

4. In a stand mixer (or with a handheld mixer), in a separate bowl, beat together butter and sugar on medium speed until light and fluffy, about 1-2 minutes. (These are your wet Ingredients.)

5. Add in the eggs and molasses into the “WET” ingredients and beat on medium-low speed until combined.

6. Add in the dry Ingredients and beat together until combined.

7. Roll the dough into 1” diameter balls.

8. Pour 1/4 cup of granulated sugar onto a shallow dish, and roll cookie balls in sugar to completely coat.

9. Place on cookie sheet at least 1 inch apart and bake for about 8-10 minutes.

10. Cookies will crack at the top, and the centers will still be a bit gooey.

11. Remove from oven and let cool for 2 minutes to firm slightly (if you move them too quickly off the baking sheet, they will fall apart), and then let cool completely or serve warm.

12. Cookies last up to one week in an airtight container (however in my home they never make it that long. (LOL).

Amanda Roberts - Crazy Dumplings - PROMO Blitz

Hi! My name is Amanda and I am an American who has been living, writing, and cooking in China for nearly three years. China’s favored dish, the dumpling (or jiaozi in Chinese), can be found on every street corner, in every restaurant, and in every kitchen in China, but they are all pretty much prepared the same way: a bit of meat, some garlic and ginger, and a bit of vegetables if you’re lucky. Even a visit to the freezer section at any grocery store displays hundreds of packages of dumplings that all look and taste the same.

But the dumpling is so versatile! Have you ever tried stuffing a dumpling with chicken? Refried beans? Cheesecake filling? No? Hardly anyone has! My cookbook, Crazy Dumplings, takes this simple staple food and prepares it in ways you never thought possible! From buffalo chicken dumplings to pizza dumplings to apple pie dumplings, a world of foods is available to you in an easy dumpling wrapper with Crazy Dumplings.

EXCERPT/SAMPLE

Basic Dumpling Wrapper

3/4 cups flour
1/3 cup boiling water
Dash of salt
Flour for dusting

1) Mix flour and salt together in a mixing bowl.
2) Drizzle in water, mixing with a chopstick or fork.
3) Leave in bowl, covered with plastic wrap for 15 minutes.
4) Gather dough up into a ball and kneed on counter for a minute or two (until the dough is
smooth)
5) Pinch off small portion of dough and roll into a ball (about 1 inch in diameter). Roll out into a
flat circle on the counter, dusting with flour to keep dough from sticking.
6) Put small amount of preferred dumpling stuffing mixture into the middle of the flat
dumpling wrapper. Pinch the dumpling closed.
7) Cook dumplings.
a. To fry dumpling, preheat oil for 30 second then lower heat. Cook dumpling on each
side for only about one minute or until golden brown.
b. To steam dumplings, place in a steamer or on an elevated plate in a wok over water
for about 10 minutes.
c. To boil dumplings, place in boiling water for about 5 minutes.
8) Always cut a dumpling open to make sure it cooked through.
9)Serve!

Taco Dumplings

½ lb ground meat (beef, pork, or turkey)
½ cup shredded cheese
1 tablespoon chili seasoning
1 tablespoon ground cumin
½ tablespoon garlic powder
¼ cup chopped cilantro (optional)
12 dumpling wrappers
Salsa, guacamole, cheese sauce, sour cream (as optional dip options)

1. Mix ground meat, shredded cheese, spices, and cilantro together in mixing bowl.
2. Spoon mixture into dumpling wrappers.
3. Fry dumplings for about 1 minute on each side or until golden brown (be sure to
open one to make sure the meat is thoroughly cooked).
4. Serve hot with sauces for dipping.

Guacamole

2 avocados
1 small tomato, finely chopped
¼ of an onion, finely chopped
1 clove of garlic, pressed
a few sprigs of cilantro, finely chopped
1 lime or lemon, halved
Dash of salt

1) With a spoon remove the avocado meat from the rind and remove the seeds. Mash the
avocado meat with a spoon and fork.
2) Mix in tomato, onion, garlic, and cilantro
3) Squeeze in lemon juice (watch out for seeds!)
4) Add salt to taste
5) Enjoy!

Amanda Roberts received her master’s degree in English from the University of Central Missouri in 2009. In 2010, she and her husband moved to rural Hunan, China to teach English. Amanda has been chronicling their adventures on her blog Two Americans in China for nearly 3 years.

One of her biggest obstacles to overcome was learning how to cook all over again. She discovered that this is a major frustration for most expats living abroad. Crazy Dumplings is her first book in what will hopefully become a full line of cookbooks for expats and people living at home who want
to learn fun and more natural ways of cooking.

Review - Simply Grilling by Jennifer Chandler

Simply Grilling by Jennifer Chandler
Released: April 17, 2012
Publisher: Thomas Nelson
Age Group: Young Adult
Pages: 256pages
Format: Hardback
Source: Publisher
Rating: 5/5
Author Site: Jennifer Chandler

Oh my Gosh do not even get me started on how I feel about this cookbook! This has quickly became one of the most used cookbooks in our home for the simple reason is it's typically geared towards mainly "grilling" menu's and such. We are a family that loves to grill but we were kinda limited to things like steak, hamburgers, hot dogs...you get the picture?

Simply Grilling showed us how simple it was to do vegetables and seafood on the grill and it just opened up our eyes to so many more possiblilities than what we had been doing. We increased our grill usuage threefold and you can do alot of these recipes on your indoor grill as well with minor changes and that is great when it's too hot out or rainy to be doing outdoor grilling.

One other major thing I enjoy about Simply Grilling other than the wide assortment of food is each recipe has it's own page with photo along with cooking tips, suggested sides, and other neat info and not just a wad of pictureless recipes on a page.

I always knew you "could" do lots more with your grill but was always afraid to try it because it seemed to much trouble or time consuming and having this cookbook on my shelf gave me the encouragement I needed to try these new things.
